Chuẩn bị nguyên liệu. Rửa sạch hành boa rô, cắt phần đầu trắng thành từng lát mỏng. Khoai tây rửa sạch, gọt vỏ, cắt miếng vuông.
Làm nóng chảy 50gr bơ trong nồi với lửa vừa rồi thêm hành boa rô vào đảo đều khoảng 5 phút. Khi hành boa rô đã mềm cho khoai tây vào, thêm 1 lít nước; nêm với 1/4 muỗng cà phê muối.
Khi nồi khoai tây sôi thì vặn nhỏ lửa và ninh khoai tây trong khoảng 30 phút hoặc đến khi thấy khoai nhừ thì để khoai nguội bớt rồi dùng máy xay sinh tố xay mịn. Sau đó đổ lại khoai đã xay vào nồi, thêm 500ml sữa và nêm nếm lại cho vừa miệng.
Đun sôi lại và múc ra chén, trang trí với lá ngò tây, rắc chút tiêu ăn kèm cho thơm; nếu thích thêm vài miếng bánh mì nướng giòn lên trên mặt súp ăn kèm cũng rất thú vị đấy!
